3 Breakfast Hash Recipes That’ll Make Mornings Way Easier

I know as well as anyone that mornings are chaos.


Whether you're rushing kids out the door or just trying to drink your coffee before it gets cold, making a nourishing breakfast can feel like a stretch.


That’s why I’m a huge fan of breakfast hash. One pan. Packed with protein. Easy to prep ahead.


And you can toss in whatever veggies you’ve got hanging around.


Here are 3 go-to hash recipes featuring our pasture-raised meats to help you get breakfast on the table without the stress.






1. Beef + Sweet Potato Hash


Protein-packed, naturally sweet, and totally satisfying.



You’ll need:

  • 1 lb ground beef (from happy, pasture-raised cows 🐄)

  • 2 medium sweet potatoes, diced

  • 1 small onion, chopped

  • 1 bell pepper, chopped

  • 2 cloves garlic, minced

  • Salt + pepper to taste

  • Optional: eggs on top



How to make it:


  1. Brown the ground beef in a skillet and set aside.

  2. In the same pan, sauté onions, sweet potatoes, and bell peppers until soft (about 10–12 mins).

  3. Add garlic and cook another minute.

  4. Toss the beef back in. Stir it all together.

  5. Crack in a few eggs and cover if you want 'em cooked right on top.



Make-ahead tip: Cook everything except the eggs and refrigerate for up to 4 days. Reheat in a skillet and top with a fresh egg.






2. Sausage + Apple Breakfast Hash


A little sweet, a little savory, a lotta delicious.



You’ll need:

  • 1 lb mild breakfast sausage (loose or patties chopped up)

  • 1 apple, diced (Honeycrisp or Gala work great)

  • 1/2 red onion, sliced

  • 1 russet potato, diced

  • 1/2 tsp cinnamon

  • Salt + pepper to taste

  • Optional: fresh thyme or sage



How to make it:

  1. Brown the sausage in a large skillet and remove.

  2. Sauté the potatoes and onions in the same skillet until golden.

  3. Add apples and a dash of cinnamon.

  4. Return sausage to the pan and stir it all together.

  5. Sprinkle with herbs if you’re feeling fancy.



Freezer tip: Let it cool, portion into containers, and freeze for up to 2 months. Just reheat in a skillet or the oven.






3. Bacon + Veggie Hash


For the “I need to clean out my fridge” mornings.



You’ll need:

  • 6 slices pasture-raised bacon, chopped

  • 1 zucchini, diced

  • 1 red bell pepper, diced

  • 1 small yellow squash, diced

  • 1/2 cup cherry tomatoes, halved

  • 2 cups diced cooked potatoes (leftovers work great)

  • Salt + pepper to taste



How to make it:

  1. Cook the bacon until crispy. Remove and set aside.

  2. In the bacon fat, sauté all the veggies until tender.

  3. Add cooked potatoes and stir until heated through.

  4. Return the bacon to the pan and toss it all together.



Meal prep tip: Store in the fridge for up to 4 days. Makes an awesome lunch, too.
