What You’ll Need:
2 cups BBQ sauce (your fave)
1 whole pineapple, peeled and top removed (save the top!)
1.5 cups chicken broth
At least 2 skewers or some kitchen twine
How to Make It on the Grill:
Preheat your grill to medium heat.
Prep the ribs: Remove the membrane from the back (trust us, it makes a big difference). In a bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Rub that seasoning all over the ribs.
Wrap the pineapple:
Stand the pineapple upright on a foil-lined pan.
Carefully wrap the rack of ribs around the pineapple.
Secure the ribs with skewers or twine (if using skewers, poke them through about ¼ of the way down from the top).
Wrap the whole thing loosely in foil. Pour chicken broth over the pineapple before closing it up.
Grill it upright for 1.5 to 2 hours. Baste occasionally with BBQ sauce. Rotate every so often so it cooks evenly on all sides.
Finish it up: When the ribs are tender and caramelized, pull it off the grill. Let it rest for 5–10 minutes.
Unwrap & serve: Remove the skewers or twine. Slice the ribs and pineapple together for that sweet-savory combo. Pop the top back on for pics—because yes, this meal deserves a photo shoot.
How to Make It in the Oven:
Preheat your oven to 350°F.
Prep the ribs just like above: remove the membrane, rub on the seasoning blend.
Wrap the pineapple on a foil-lined baking pan, same method as the grill instructions. Secure the ribs and wrap the whole thing in foil, pouring broth over the pineapple.
Bake upright for 1.5 to 2 hours. Baste with BBQ sauce and rotate the pineapple a few times during cooking.
Rest & slice: Once ribs are tender and glazed, take it out, let it rest, then unwrap and slice. Don’t forget the pineapple top for the “wow” factor.
Why This Works:
The pineapple juice steams into the ribs for max tenderness.
The rub + sauce combo gives you that smoky, sweet, sticky bark.
It looks fancy but takes zero fancy tools.
So next time you need a meal that says, “Yes, I did make that,” this is your go-to.
